-1 gallon water
-1 Tbsp. citrus zest (lemon, lime or orange – optional)

Instructions

In a pot put salt, sugar, and other aromatics and simmer until the salt and sugar are completely dissolved.

Remove the pot from the heat and allow it to cool before using the brine.

Allow the protein to brine for 6 hours.
